Sometimes I like to make recipes exactly as I find them and then sometimes I like to play around with them. I have made so many variations of brownies it is probably going to end up being the cause of my death. But that isn’t the point of this post…the past couple of weeks we have had a dinner drive at the school for a family who just had a new baby and I signed up to make a dinner for one day…so I searched and searched and then put together a couple different recipes for
Broccoli Quinoa Casserole
One 10 oz can condensed Cream of Broccoli soup
1/3 cup reduced fat mayonnaise
2 tablespoons milk
1 1/4 cups reduced fat shredded cheese (cheddar, colby-jack, etc)
1/4 teaspoon black pepper.
2 cups fresh broccoli
1 1/2 cups COOKED quinoa
1 tbsp & 1/4 cup minced garlic(optional if you don’t like garlic)
3/4 cup quinoa
1 1/2 cups water
1/4 teaspoon salt
In a small pot cook quinoa following directions, add 1 tbsp minced garlic.
Preheat oven to 350 degrees and grease/spray casserole dish. Chop broccoli up into smaller/bite sized pieces.
In a large bowl combine the soup, mayonnaise, milk, 1 cup shredded cheese, pepper, and garlic until well mixed. Stir in the quinoa and broccoli.
Pour into casserole dish, add remaining cheese and bake for 30-35 minutes or until bubbly on the edges and golden.
