I’m back! Finally! I was out for the count sick at home since Thursday and spent most of the weekend laying low…and not getting to really enjoy my three day weekend. So forgive me if you suddenly get tons of comments on your posts from me!
I made chili yesterday for the family and we don’t often get chili (growing up Latina right?)
Lots of people are particular about their chili. Maybe you don’t like beans in it? Maybe you are light on the meat? Well…I love my chili very meaty and with lots of beans!
This is my favorite recipe:
1lb ground beef
1 package Hot/Spicy italian sausage
4 cans of Red (kidney beans)-keep liquid
2 cans of white beans-keep liquid
3/4 C Spanish onion(finely chopped)
1 small tomato(finely chopped)
2 small cloves of garlic(minced)
1/2 C tomato sauce or paste
*seasonings to taste:
Oregano
Chili Powder
Parsley
Cumin
For Spicy chili add: 1 Jalapeno(finely chopped), 1 tbsp your favorite hot sauce and of course, more chili powder
1. brown ground beef and cook sausages. Once cooked, chop sausages into small pieces. Chop onion, garlic and tomato add to crock pot
2. Add beans & meat to crockpot. Stir together and season to taste. Add liquid from beans depending how you like your chili. I added most of the liquid from mine.
3. Set on Low for 5-6 hours or High for 2-3. I usually do a mix of both(High for 1 1/2 then low for 3-4)
and then enjoy!
