Cooking Adventures: March Edition!

I really do. So back again sharing some foods I’ve cooked and foods Ive eaten since the last time…which you can see here & here.

 Chili Lime Chicken Quinoa Bowls 
 
another pizza night 
*In an effort to maybe do something healthier for once I accidentally picked a SUPER thin crust that actually turned out to be basically a wrap. So I put the 3 in the package together to form a semi decent crust. Lesson learned…stick to my normal crust.
Pepperoni, italian sausage, pineapple, onions & jalapenos(one w/cheese, one w/out)      
 
Udon noodles w/chicken or salmon & Peanut sauce 
*this was probably the least appetizing looking meal i’ve made in a while but I kind of threw it all together. I wanted Fish and my roomie wanted chicken. I had to improvise the peanut sauce because I was missing ingredients. BUT all delicious anyway! 
 
 
Mojo Chicken Quinoa Lettuce Wraps
 *We still had lettuce & tzatziki sauce from the pitas so we made some chicken & quinoa for wraps!  
 
 
Spicy Tuna Spaghetti Squash
Chicken Satay Tacos w/Peanut Sauce  
I improved on the peanut sauce and had all the ingredients! 

 

Pineapple Upside Down Cake 
(*Best i’ve ever made, going to share the recipe next week!)

It’s Monday Again!

OOh man I have been slacking so hard on blogging the past couple weeks so I thought it would be a good time for an update!

In the past couple weeks we have…

Gone to Autorama to see some fun old & new cars!

Had dinner at Sugar Factory for the first time and was SUPER disappointed. The food was crap and $35 for a drink that tasted like juice but bubbled and smoked was ridiculous. 

Had family dinner at Bd’s Mongolian grill and got to see Thenewguy play with the kids and it was adorable!

Celebrated St. Patrick’s Day in Chicago! Froze our asses because it was damn cold and then headed to Timothy O’Tooles to see my friend Joe the Leprauchaun
 

I had a terrible stomach bug for a while…that pretty much ruined me. Thenewguy brought me over a whole care package and then refused to sit anywhere near me so I wouldn’t get him sick.
(*teaching is basically working in a germ factory) 

Bought our Lollapalooza wristbands for this summer. Then the lineup came out and I almost shit myself with how excited I was! 

 A Saturday afternoon spent reading on the couch while he plays Fortnight 

 Friends having babies and revealing genders! **Its a boy!!

and of course there was food…so much food…I’ll share the foods i’ve cooked this month in another post but here are some of the meals we ate out: 
 Tacos @ Broken English Taco Pub for book club meetup!

BBQ @ Smoke Daddy on a decent weather day

A 2 hour wait to have brunch @ Batter & Berries which was 100% worth it! 

And some Thai food @ Sticky Rice! 
 So that is my little recap of the last few weeks!

Cooking Adventures!

Back again with some more meals! You can see what I was cooking in January here.

I must have forgotten to do February so here we are some fun recipes we have been cooking!

I found a Banana Caramel pancake mix at World Market so Saturday Morning pancakes w/bacon were in order
 
Non-Dairy Chicken Pot Pie! 
To make this an easy meal we used Ripple milk in place of the cream/milk, flaky biscuits as a top, frozen mixed veggies and shredded rotisserie chicken!  
 
Chorizo & Potato Tacos w/Spanish Rice 
Turns out Thenewguy has never had the most simple of tacos before. This is one of my i’m lazy and don’t want to cook foods. (Potatoes were diced from a bag, tortillas were some flour street tacos) 
 
Chicken Brats! 
We had some grilled onions and rice to get rid of from the Steak dinner so we used them with brats! 
 
Steak Pitas w/Homemade Lactose Free Tzatziki and pasta salad 
 We had to get rid of the leftover steak before it went bad so I decided on steak pitas. I found a recipe for homemade dairy free tzatziki and realized I was supposed to have soaked the cashews overnight and didn’t. Fail. So I bought some lactose free yogurt. It was a bit runny but still tasted great. I made the cashew one later just to try and it was just as good! 
 
 
 
 The first cheeseless pizzas
He doesn’t like my vegan cheese and I will die if I have regular dairy so cheeseless pizza it is! Left side: BBQ sauce, Pepperoni, Pineapple & Jalapenos Right Side: Marinara, Onions, Tomato & Grilled Chicken!
