So much food…
Since we are cooking at home I feel like Thenewguy does is post pictures of food and all I do is spend all my time cooking, thinking about what to cook or buying food to cook. It took a couple weeks of getting back into a groove for me to start figuring out how to cut back on food shopping expenses. When I wasn’t being careful I was spending $20-30 on ingredients for a meal which is ridiculous and way more work than just eating out!
Anyway…here are some of the meals we have been eating…
Spaghetti & Meatballs
Chicken Flautas
Spaghetti Squash & Curry Meatballs
Lemon Butter Chicken & Rice
Pineapple Chili Steak Lettuce Wraps
Thai Basil Chicken & Rice
Steak Fajitas w/Uncle Julio’s tortillas (because I wont eat any other not fried tortillas)
Banana Peanut Butter Pancakes (flour free) w/Bacon
That pretty much covers the last couple weeks for non failed dinners or anything that may have come from a box! Feel free to ask for any recipes!

All of the things you cooked look delicious! Today I tried to re-create a salad that I ate once at Disney World. It was a salad with chicken, black beans, sauteed corn and red peppers with a Cilantro-Lime Vinaigrette. The salad part was good, but the dressing recipe needs some tweaking.

Haha trying to figure out what to make for dinner and avoiding food waste were my top two pitfalls when I got back into cooking at home, so I feel your pain! I actually made a list of my easy favorites (some of which I had forgotten about until writing it out) and referred back to it when I was in a rut or just had no idea what to make. Spaghetti and meatballs are definitely on there! Those steak fajitas and Thai basil chicken look delicious!
