Usually about once a week I try a new recipe of some kind…mostly baking but I have been trying to do more thank make foods that make my ass bigger. I love meatloaf. Love it. So I thought I might try a Paleo friendly version so that I could eat the no-bake cookie dough for dessert I had been craving.
The thing is I am no good at taking photos of the process..I took some for this one but please forgive the awful photo of the end result because I am still learning!
Paleo(ish) Meatloaf
Ingredients:
2 pounds of ground beef or turkey
1 can of tomato sauce or 1 cup of pureed tomatoes
Veggies(I used spinach and carrots)
1-2 cloves of garlic
1/2 Onion
1 egg
Seasonings-depends how you like your meatloaf(I used chili powder & Adobo)
Put the tomato sauce in the pot and turn it on low and uncovered. Using a food processor chop up your veggies and add the garlic & onion. Mix it together with the meat, egg and seasonings. Shape it and put it in the pot for High 2-3 hours or Low 4-5 hours.
*a little note, half way through you should pour some of the sauce on top of the meatloaf. It can get a bit dry.
We had this with mashed sweet potatoes and it came out great! If you are looking for an easy dinner that is gluten & crappy carb free this is a great and filling way to go!
